Nachos – Corn Chips Recipe With Baked Beans

No. of Servings: makes 8 servings
Preparation time: 10 to 15 minutes

Ingredients:

  • Extra thick corn chips 1 to 14-oz bag
  • Refried beans 2 ½ to 3 cups
  • 2 to 3 cups grated cheddar cheese
  • 4 to 5 diced jalapeno peppers
  • Salsa
  • Sour cream
  • Guacamole
  • Chopped cilantro

Method of preparing nachos:

  • Start by pre heating the oven to 350 degrees F. Next place a section or layer of the tortilla chips on the base of a shallow and wide baking plate. It is preferable if the baking dish can double up as a serving dish – this way the arrangement will not get disturbed at the time of serving.  A good option would be to use a ceramic platter.
  • Next take the refried beans and spread them all over the corn chips. Here having extra big and thick chips are beneficial as they do not break when you place the refried beans on top.
  • Grate the cheddar cheese and sprinkle it on top of the beans and chips that have been arranged on the plate.
  • The diced jalapeno peppers can be arranged in a layer over the cheese. Place this arrangement in the oven and allow it to bake for 10 to 15 minutes. If the cheese has not melted into a gooey consistency then bake it for a few more minutes till it does. Place it for 5 minutes in the convection oven, if you feel you need to.
  • Next pour some sour cream and some dollops of salsa on top and all around the chip preparation. You can also add the guacamole to the dish. For garnishing sprinkle the chopped cilantro all over. It is ready to serve.
  • Nachos are considered to be less Mexican and more Tex Mex as it was an invention of Ignacio Nacho Anaya. He was a restaurateur who served American servicemen during the 1940’s.  The essence of nachos is just the layer of chips that are served with cheddar cheese that is melted and jalapeno peppers. The perfect ingredients that make this dish complete are refried beans, perfectly formed corn chips, salsa, jalapeno peppers, guacamole, fresh cilantro, refried beans and sour cream. Canned beans can also be used but refried beans taste the best.
  • The salsa can be made with fresh tomatoes or with cooked tomatoes. But the option that goes well with this recipe is salsa made from cooked tomatoes.
