Mango Parfait Recipes With Mango Caramel and Lemon Parfaits

Home Made Mango Parfait Recipes

Parfait Ingredients:

For mango parfait:

9 ounces mango, peeled and roughly chopped
4 egg yolks
3 ounces water
7 ounces castor sugar
9 ounces double cream, reduced fat
3 ounces egg whites, free range

For Meringues:

2 egg whites
2 ounces castor sugar

For Garnish:

6 ounces double whipped light cream, fat free
3 passion fruit, only flesh scooped out
½ medium mango, sliced finely
2 tablespoons of icing sugar

Method:

  1. In a sauce pan add water, egg yolks, and half the amount of sugar and heat over a low flame, stirring constantly.  Cook gently until the mixture thickens or for about 10 minutes. Pour this mixture in a mixing bowl and whisk until it gets cool, light and fluffy.
  2. Blend the roughly chopped mango pieces in a blender to get a smooth mixture. Sieve the blended mango to remove any excess fiber. Place the sieved mango pulp in a bowl.
  3. Add whipped cream to this mango pulp and whisk this mixture until you get soft peaks and the mixture is light and fluffy. Fold this mango cream mixture in the egg yolk mixture gradually just to mix the two.
  4. In another bowl whisk egg whites with an electric blender to get soft peaks. At this stage add sugar and whisk further to get stiffened peaks when the whisk is removed. Fold the egg white mixture in the egg yolk and cream mixture gradually but thoroughly.
  5. Line six pudding moulds with cling film and transfer this mixture into each mould. Freeze in the refrigerator for an hour or two or until completely set.
  6. Preheat the oven to 200 degrees Fahrenheit.
  7. Place the egg whites for meringue and whisk until soft peaks are formed. Add sugar gradually and continue to whisk to get stiff peaks when the whisk is removed from the mixture. Transfer this mixture into a piping bag and pipe the meringue in a spiral form to fill the circle. Place in the oven and bake for about 20 minutes. Turn off the oven but do not remove the meringue from the oven for up to 2 hours. As they turn crisp in the oven, remove and cool them completely.
  8. 5 minutes before serving remove the parfait from the fridge. In the serving plate place the meringue disc at the bottom and spread whipped cream on top of it. Spread the cream with passion fruit. Repeat all the three layers again and finish with a third meringue. Turn parfaits on the plates with meringue and top with a few mango slices. If desired dust stacks with icing sugar and serve. This recipe makes six servings.

Health Tip:

  • Avoid sieving the mango pulp in step 2. The fiber in mango offers many health benefits to the body.
  • Use only low fat cream in the recipe instead of full cream.
