Lemon Jello Cheese Cake Mousse Recipes for Supper

Home made Cheesecake Recipes with Lemon Cheesecakes

Ingredients:

½ pack silken style firm tofu, around 6.25 ounce pack
1 tablespoon lemon juice, fresh
2 teaspoons lemon peel, freshly extracted
4 teaspoons dried egg whites
4 ounce cream cheese, low fat
¼ cup sugar
¼ cup water
1 teaspoon vanilla extract
3 tablespoons strawberry preserves, reduced sugar
Fresh sprig mint (optional)
Fresh strawberries (optional)

Cheesecake Lemon Jello Recipe Method:

  1. Drain tofu in white paper towels and cut into half inch thick slices. Leave aside.
  2. Combine dried egg whites with water and vanilla in a medium bowl. Beat the mixture with a wire whisk or an electric beater on medium speed till the tips of the egg white curl on the top, or till soft peak stage. Add sugar at this stage and continue beating on medium speed till the egg white mixture forms stiff peaks or till the peaks stand straight. Leave aside.
  3. Combine cream cheese, tofu, lemon juice or lemon peel in a blender or a food processor and blend or process until you get a smooth mixture for few seconds. Don’t over mix. Fold this smooth tofu mixture gently in the beaten egg white mixture. Stir just enough to combine both the mixtures but till some preserves and steaks of egg white remain.
  4. Before serving spoon this mousse in six different dessert cups. Top each cup with a fresh strawberry. You may also garnish the mousse further with a mint sprig each. This recipe makes 6 cups.

Health Tip:

  • This is a low calorie recipe that provides just 112 calories and 5 gm total fat per serving. Lemon cheesecake mousse can also be considered a heart friendly and diabetes friendly recipe as it is not only low in total calories but also low in total carbohydrates and total cholesterol. It provides around 13 gm carbohydrates and 14 mg cholesterol per serving.
  • To reduce the total calories and carbohydrates further you may substitute table sugar with a natural sweetener or artificial sweetener.
  • Make sure to use only reduced fat or low fat and reduced sugar cream cheese and strawberry preserves respectively.
  • The protein from tofu in this tempting mousse can be considered good quality protein. Lemon cheesecake mousse provides around 5 gm protein per serving. You may choose to extract milk from soy beans at home and prepare tofu from that home made soybean milk. But this can be a tedious and lengthy process which may require preparations beforehand.
