Crumble and French Peach Tart Recipes

Ingredients:

For cream pastry:

4 tablespoons plain flour
1 pint or 600 ml milk
4 egg yolks
5 tablespoon castor sugar

For tarts:

1 pound readymade puff pastry
1 whole egg, beaten
8 fresh peaches, seeded and sliced
Flour, for dusting
2 ounces melted butter
Butter for greasing

For crumble topping:

3½ ounces plain flour
2 ounces sugar
2 ounces butter

To serve:

Fresh mint sprigs
Vanilla ice cream, ready made

Cooking Method for Tarts

Method:

  1. For cream pastry: Whisk egg yolks in flour in a large bowl to get a smooth mixture. In a sauce pan add sugar to the milk and boil on a low or medium flame. Cool for 5 minutes. Pour the milk in the egg and flour mixture gradually, pouring small amounts at a time. Stir constantly and mix well. After the addition, return this mixture back to the pan. Stir constantly on low heat till the mixture thickens. Remove the pan from heat and leave it aside.
  2. Preheat the oven to 400 degree Fahrenheit. Lightly grease a baking dish with butter.
  3. For tarts: Lightly flour a flat surface and roll out the pastry. With a fork, prick the rolled pastry all over. With the help of a round mould cut out the pastry in to 4×15 cm, 4 rounds. Place these rounds in the fridge to rest for 10 to 15 minutes. Remove them from the fridge and place on the greased baking dish. Brush the edges of the round pastry with beaten egg and spread a spoonful of cream pastry in the center of each disc. Place the sliced pieces on top of the pastry and pour over the melted butter. Place the tarts in the oven and bake for about 10 minutes.
  4. For crumble topping: In a food processor add all the ingredients of the crumble topping and process the mixture until it resembles coarse bread crumbs. Remove the tarts from the oven. Sprinkle this crumbled mixture over the baked tarts. Replace the tarts back in the oven and bake for about 10 minutes or until golden brown in color.
  5. To serve: Remove the tarts from the oven and divide equally in 4 serving plates. If desired, garnish with a spoonful of ice cream and a sprig of fresh mint. This recipe makes 4 servings.

Health tip:

  • Preferably choose low fat puffed pastry instead of other high trans fat pastries.
  • Additionally, the vanilla ice cream you use while serving should be low in fat or reduced fat in nature.
