Blueberry Scones Recipe For Healthy Breakfast

Breakfast Scones Ingredients

Sugar – one fourth of a cup
Orange peel – one fourth of a tablespoon (shred the peel into thin strands)
All purpose flour – two cups
Orange juice – three teaspoon
Butter – one fourth of a cup (margarine is a good alternative for butter)
Icing sugar – three fourth of a cup (Put the sugar in a blender, if icing sugar is not available)
Baking soda – one fourth of a teaspoon
Frozen blueberries – one cup
Frozen egg product – one fourth of a cup
Salt – one fourth of a teaspoon
Baking soda – one fourth of a teaspoon
Vanilla extract – one teaspoon
Fat free milk or sour buttermilk – half a cup

Method Of Preparation

  1. Stir in the sugar, baking soda, orange peel, all purpose flour, baking powder and salt, in a large dish.
  2. Use a knife or a pastry blender to cut the margarine into the flour and knead it till the flour resembles bread crumbs.
  3. Mix the vanilla essence, frozen egg product and buttermilk. Pour this mixture into the flour, by making a well in the center of the flour.
  4. Mix the flour and the buttermilk mixture thoroughly, with the help of a fork. You will now have a ball of half formed dough. Put in the blue berries and fold in a gentle manner.
  5. Place the half formed dough on to a floured surface.
  6. The prepared dough is soft and pliable so you can knead it with only a small amount of pressure. Knead the dough gently but thoroughly so that the blueberries are not completely squashed.
  7. Grease a baking sheet. Place the dough onto the baking sheet.
  8. Cut the dough into ten uniform wedges.
  9. Place the baking sheet in an oven, at a temperature of 400 degree Fahrenheit. Allow the scones to bake for 15 to 20 minutes.
  10. The scones are golden brown in color, when done. Place them on a wire rack to cool.
  11. Pour the orange icing over the scones and serve warm.
  12. Preparation of orange powdered sugar icing: Mix one fourth of a teaspoon of orange peel and three fourth cup of powdered sugar in a bowl. Add the skimmed milk and orange juice to the mixture and bring to a drizzling consistency.
