Vanilla Fat-Free Yogurt Recipe

Ingredients required:
Plain Low Fat Yogurt: 3 cups or approximately 1 ½ pounds
Clover honey: 1 cup
Split vanilla bean: 1 large bean

Method:

  • Place the low fat yogurt in a large mixing bowl. It is important to use yogurt of the low fat variety, instead of the non fat or fat free variety. Non fat yogurt does not work in the same way, with this recipe.
  • Mix the split vanilla bean as well as the clover honey, in a thick-bottom saucepan and warm it over a low flame, for about 15 minutes.
  • Keep stirring the honey and vanilla bean, occasionally, while it gets warm. The honey should not be boiled or heated too much.
  • After fifteen minutes, remove the saucepan from the heat and cover it with some plastic wrap. Let is stay covered for about 20 minutes.
  • Once the honey has cooled a bit, scrape out the pulp of the vanilla bean. After scraping the bean thoroughly, it can be discarded.
  • Mix the pulp of the vanilla bean into the honey and mix them together.
  • Gently, whisk the vanilla flavored honey into the yogurt and mix it properly.
  • This yogurt should be refrigerated for at least four hours, or preferably even overnight. The longer the yogurt is refrigerated, the better it will turn out.
  • After refrigeration, the yogurt can be place in an ice cream freezer.
  • Serve the frozen vanilla yogurt in a chilled glass, topped with a mint leaf.
