Yellow Corn Kernels Recipe

Ingredients required:
Fresh yellow corn kernels or Frozen corn kernels (thawed): 1 cup
Zucchini: 1 pound
Olive oil: 2 teaspoons
Green onions/ spring onions: 2 bulbs
Parsley: 2 tablespoons (approximate)
Garlic: 2 cloves
Black pepper powder: A pinch
Salt: ¼ teaspoon.

Method:

  • First clean and chop the zucchini, into half inch pieces. A pound of zucchini should yield about 4 cups of diced zucchini.
  • Peel the green onions, and cut them into thin, long slices. It should yield around 2 tablespoons of chopped onions.
  • Clean the parsley and chop it into tiny bits. Crush the garlic or cut it into very fine slices.
  • Place a large non-stick wok or skillet, over a medium or high flame. Once the pan gets warmer, pour some olive oil into it.
  • Add the crushed or sliced garlic and allow it cook for about a minute, before adding the chopped green onions.
  • Sautee the onions on a low flame for another minute and then add the corn kernels and the diced zucchini. Increase the heat slightly and allow them to cook for at least another 5 minutes.
  • Then, add the rest of the ingredients, which are the parsley, the salt and the black pepper.
  • Allow all the vegetables to cook again, with the added spices, for another minute or two, before taking it off the flame.
  • Serve the dish or eat it, while it is still hot!

Alternate tips

  • This recipe tastes great on it own, but also can be eaten with steamed brown rice or whole wheat bread.
  • Other herbs like basil and oregano can also be used, for added taste and flavor.
  • If preferred, green or yellow peppers could also be added to the dish.
