Spicy Jambalaya Sausage Recipe with Catfish

Catfish and Sausage Jambalaya Recipe

Catfish and sausage jambalaya can be enjoyed as a main dish for your major meals.

Ingredients:
4 ounce frozen catfish, thawed
½ cup long grained rice, raw
½ medium onion, chopped
½ stalk celery, chopped
2 ounce Italian turkey, sausage cut into half inch pieces
2 clove garlic, minced
¼ cup green bell peppers, chopped
½ can chicken broth, approximately 7 ounce
1 two ounce tomatoes, un-drained, diced
1/8 cup tomato juice or water
¾ teaspoon paprika, sweet
1/8 teaspoon cayenne pepper
¼ teaspoon dried thyme
½ teaspoon dried oregano
2 teaspoon vegetable oil
Salt to taste

Catfish Jambalaya Method:

  1. If you use frozen catfish then thaw it thoroughly before cooking. Wash the fish and pat it dry with some paper towels. Cut the fish in to chunks of ¾ inches and leave aside.
  2. Take a large sauce pan and heat oil over medium flame. Add garlic, onions, celery, sweet pepper, and cook for about 5 to 7 minutes, stir occasionally. As the vegetables become tender and soft, add the sausage pieces. Stir and cook for another 5 minutes or till the sausages are no longer pink in color.
  3. Add chicken broth, un-drained tomatoes, water or tomato juice, rice, oregano, thyme, paprika, and cayenne pepper.
  4. Bring to a boil and then reduce the flame.  Cover and simmer the contents on low flame for about 20 minutes. After the liquid is completely absorbed by the rice and the rice is almost tender add the catfish. Make sure to add the catfish pieces only in the last 5 minutes of cooking.
  5. Remove from heat, cover and let it stand for another 5 minutes. Serve hot. This recipe serves two.

  • This recipe provides 372 calories per serving. It can also be considered a high protein recipe as it provides 19 gm protein per serving, but the fat content is moderate, 11 gm per serving.
  • This recipe is high in sodium as it provides around 706 mg sodium. So a person with high blood pressure or on a sodium restriction diet should include this recipe in this diet only after consulting a health care professional.
  • Use low fat chicken broth to decrease the total calories and total fat content of the recipe. Also use turkey without the skin.
  • You may also substitute white rice with brown rice. Brown rice is more packed with nutrients and fiber compared to white rice which provides various health benefits.
