Making Of Roasted Vegetable Pizzas – Was Never So Easy Before

Roasted Vegetable Pizza Ingredients

8 ounce whole wheat bread dough loaf, frozen
½ medium onions
½ cup red or yellow tomatoes, chopped
1 ½ medium red bell pepper
¼ teaspoon red pepper, crushed
½ cup mozzarella cheese, part skimmed, shredded
½ cup queso fresco cheese, shredded
1 teaspoon fresh basil, snipped
Olive oil flavored cooking spray

Method:

  1. Rinse and cut bell pepper into two halves. Remove the seeds, membranes and stems from both the halves. Line a baking sheet with foil and place the cut peppers over the lined baking sheet in such a way that the cut sides are facing down.
  2. Lightly coat the onion strips with olive oil flavored cooking spray and place them around bell peppers on the baking sheet.
  3. Bake the vegetables in a 425 degree Fahrenheit oven for about 7 to 10 minutes. Remove the onions and set aside. Bake the bell peppers further for 12 to 14 minutes or until its skin is browned and bubbly.
  4. Carefully wrap the baked peppers in foil and let it stand for 10 to 15 minutes. When they are cool enough to handle gently pull off its skin with the help of a paring knife. Cut the peppers into one inch wide and long strips.
  5. Lightly coat a pizza pan (12 inch large) with nonstick cooking spray. Pat whole wheat bread dough loaf into an 11 inch circle in the pizza pan itself. Build up its edges slightly. Prick the bottom of the crust lightly with a sharp fork.
  6. Do not let it stand in a warm place or it will rise. Bake it immediately in a 425 degree Fahrenheit oven for about 10 minutes or until evenly browned. Remove the pizza base from the oven and cool on a wire rack.
  7. Lightly coat the baked pizza base with nonstick cooking spray. Sprinkle the crushed red pepper evenly all over the base. Top with shredded mozzarella cheese, roasted pepper strips, roasted onion, and chopped tomatoes.
  8. Sprinkle grated feta or queso fresco cheese. Place the prepared pizza again in a 425 degree Fahrenheit oven and bake for about 5 to 7 minutes or until the crust is crisp and the cheese melts. Sprinkle dried oregano or basil. Serve warm. This recipe makes 4 servings.
