Spice Up Turkey And Mango Salsa Recipe

Turkey Recipe Ingredients:

2, 2 ounce each small turkey breasts, cut in to around ½ inch thick slices
1/8 cup red bell peppers, chopped finely
1/8 cup red onions, chopped finely
½ cup mango, peeled and chopped
½ teaspoon Serrano Chile peppers, seeded and chopped
2 teaspoons Jamaican jerk seasoning
¼ teaspoon salt
½ tablespoon olive oil, extra virgin
½ tablespoon lemon juice, freshly extracted
1 clove garlic, peeled and minced
½ teaspoon cumin, ground
¼ teaspoon ginger, ground
1 tablespoon cilantro, chopped
A dash of cayenne pepper
½ tablespoon olive oil
Lettuce mixed greens

Method:

  1. Combine cumin, Jamaican jerk seasoning, ginger, salt, and a dash of cayenne pepper in a small bowl. Mix well so as all the ingredients do not look separate. Reserve 1 teaspoon of this mixture aside for salsa.
  2. To the remaining mixture add minced garlic and ½ tablespoon olive oil. Mix this with your hands, with your fingers rub this mixture on both the sides of the turkey slices. Set the slices aside.
  3. To prepare mango salsa stir together lime juice, red pepper, cilantro, onions, Serrano pepper and reserved cumin mixture along with mango pulp. Mix well and your mango salsa is ready. Leave aside.
  4. Heat ½ tablespoon olive oil in a large skillet over medium heat. As the oil gets hot add half the turkey slices and cook till the turkey is no longer pink, or for approximately 2 to  3 minutes on both the sides. Repeat with the other half turkey slices, cooking thoroughly on both sides for 2 to 3 minutes. You may add more oil if necessary, ¼ teaspoon at a time.
  5. Cut the cooked turkey into bite size medium strips. Spread the lettuce greens on the serving platter and place the turkey strips over the salad. Spoon mango salsa over turkey strips, and serve. This recipe makes 2 servings.

Health Tip:

  • Spiced jerk turkey with mango salsa is a diabetes friendly recipe providing 242 calories and 8 gm total fat.
  • Try to avoid adding extra oil which is mentioned in the last part of step 4. In fact try to avoid any oil to sauté turkey slices if you intend to reduce the total calories and fat content of the recipe. Use non-stick cooking spray in place of oil.
  • Also the turkey that you choose for the recipe should preferably be skinless, as much of the saturated fat and cholesterol is located mainly under the skin.
