Cranberry Crackers Chutney Recipe

Cranberry Sauce Recipe Ingredients:

Water, for boiling
10 crackers, water
¼ cup dried cranberries
1/3 cup mango chutney
¾ teaspoon fresh ginger, grated
2 ounce softened cream cheese, reduced fat
1/8 cup walnuts, chopped coarsely, optional

Method:

  1. Boil water in a small saucepan. Cover the dried cranberries with this boiled water in a small bowl. Let it stand for 10 to 15 minutes. After about 10 minutes the dried cranberries that are soaked in boiling water will swell and get plumed. Strain the cranberries in a sieve and discard the water. Return plumed cranberries in a bowl and leave aside.
  2. If there are any large pieces in mango chutney than snip them away. Stir the mango chutney, drained cranberries and freshly grated ginger in a large bowl. Cover the bowl and place it in the refrigerator to chill for up to 2 to 3 hours.
  3. To prepare each appetizer, on a water cracker spread about 1 teaspoon of cream cheese. Top cream cheese layer with approximately 2 teaspoons of mango chutney and cranberry mixture. Sprinkle chopped walnuts on the top and serve immediately. This recipe makes 10 servings.
  4. If desired you may even store the mango chutney, ginger and cranberry mixture in the refrigerator for up to 2 days. Before serving remove the mixture from the refrigerator and proceed as directed in step 3 to prepare each appetizer.

Health Tip:

  • This is a very low calorie, diabetes friendly recipe as it provides around 57 calories and 2 gm fat per serving (one serving equals to 1 water cracker). One cranberry chutney cracker also provides 1 gm fiber, 1 gm protein and 9 gm carbohydrates.
  • The cholesterol and saturated fat of this recipe is negligible, about 4 mg and 1 gm respectively. Thus this recipe can be easily enjoyed by individuals on calorie restricted diet, low fat diet or cholesterol restricted diet.
  • You may use a variety of nuts instead of only walnuts for garnishing purpose. Although nuts are a good source of calories and fats, the quality of fats which they provide is good in nature.
  • Bright red colored cranberries are a rich source of vitamin C. They also provide good amounts of vitamin K, fiber and manganese. Cranberries are especially valued for its ability to cut down the risk of urinary tract infections for many decades. However to gain this benefit from cranberries, fresh juice of this fruit is preferred than its dried form.
