Cherry Fruit Salad Recipe

Ingredients:

  • Fresh Cherries – 2 cups, ensure that the cherries are pitted in advance
  • Pineapple  – 1 whole fruit  that should be skinned and cut into small segments
  • Orange – 1 peeled and cut into small pieces
  • Honeydew melon/ Muskmelon – ½, take off the skin of the melon and cut the fruit into small bite size cubes.
  • Roasted almonds – 1/4 cup, thinly sliced.

Ingredients for the Healthy Salad Dressing:

  • Orange juice – 3 tablespoons
  • Mayonnaise – 2 tablespoons
  • Plain yogurt –  ½ a cup
  • Lemon juice(freshly squeezed) – 1 tablespoon
  • Sugar – 1 tablespoon
  • Orange peel – 1 teaspoon (optional)

Method:

  • Before preparing the cherry fruit salad keep in mind that the sweeter the cherries used the more refreshing the salad. The juices required for the dressing also have to be freshly squeezed as this will enhance the overall taste and nutritive value of the salad.
  • Mix together all the dressing ingredients except for the orange peel. The yogurt, orange and lemon juice, sugar and mayonnaise should be blended together well in a mixing bowl resulting in smooth, slightly thick syrup.
  • The fresh cherries, pineapple, orange and melon cubes have to be tossed together in a salad bowl or a serving dish.
  • Then empty the prepared dressing over these fruits and mix them lightly so that all the fruits are well coated with the dressing.
  • Finally garnish the salad with the orange peel and roasted almonds as per your preference.
  • This salad is equally tasty served chilled straight out of the refrigerator or even at room temperature.
