Chill Cold Smoked Salmon Halibut For Refreshment

Smoked Pepper Ingredients

6 small halibut steaks
1 medium red bell pepper
2 garlic cloves
2 chipotle chiles peppers in adobe sauce
2 teaspoon adobe sauce
1 teaspoon Mexican oregano, dried
2 tablespoon lime juice
¼ teaspoon salt

Method:

  1. If you are using frozen steaks then thaw them 20 minutes before proceeding further. Rinse the fish and pat it dry with the help of paper towels. Leave aside.
  2. For marinade: Combine chipotle peppers in adobe sauce with sweet peppers, adobe sauce, lime juice, garlic and Mexican oregano in a blender container. Cover and blend the contents until smooth and pureed.
  3. Reserve half of the marinade in a separate bowl until the fish is ready to serve. Transfer the remaining marinade in a shallow glass dish.
  4. Add the fish steaks in the glass dish and mix the marinade well with the fish, spoon some of the marinade over the fish too. Cover the dish and let the fish marinate for about 30 to 40 minutes at room temperature.
  5. Drain the fish after 30 minutes and discard any remaining marinade in the dish. Season the fish with salt.
  6. Grill fish directly over medium coals on a greased rack of an uncovered grill for about 10 to 12 minutes. Test the fish with a fork, if it flakes easily then consider it done, if not then grill for 2 minutes more.
  7. Gently turn the fish halfway through the grilling process with the help of a broad spatula to ensure even grilling from both sides.
  8. Heat the reserved marinade and serve it along with the steaming hot grilled fish. This recipe makes 6 servings.
