Sea Scallop Recipes With Olive Tapenade

The soft, mildly sweet and delicate taste of scallops is enjoyed by many people even if they don’t enjoy other sea food or shell fish. Moreover scallop served with anise-orange tapenade sauce in this recipe is an combination difficult to resist.

Scallop Recipe Ingredients:

6 sea scallops
1 teaspoon orange juice
1/8 cup kalamata olives
½ green onions or scallions, chopped
Fresh orange peel, finely shredded

A pinch of cayenne pepper
1/8 teaspoon anise seeds, crushed
Salt to taste
Cooking spray

Method:

  1. If you use frozen scallops make sure to thaw them thoroughly before proceeding. Rinse to remove icy water and contamination if any. Pat them dry with few paper towels and leave them aside.
  2. In a small bowl combine ½ teaspoon orange peel, kalamata olive, orange juice, green onions, anise seeds, and a pinch of cayenne pepper. Mix well and your tapenade is ready.
  3. Lightly coat a large unheated non-stick pan with non-stick cooking spray and preheat the pan over medium to high heat. As the pan gets heated place all the 6 scallops over it. Cook the scallops till they turn opaque or for 5 to 6 minutes. Turn once to ensure even cooking from both the sides and avoid over cooking at just one side. Transfer the cooked scallops on a serving platter and serve long with tapenade. If desired, garnish with additional orange peels before serving. This recipe makes 2 servings.
