Red Pepper Sauce Pork Spirals

Pork Spiral Ingredients

24 ounce pork tenderloin
2/3 cup fresh mushrooms
2 cups spinach
7 ounce red sweet pepper, roasted
½ cup fresh basil, snipped
2 garlic cloves, minced
2 egg whites, lightly beaten
2 tablespoon dry bread crumbs, fine
2 tablespoon parmesan cheese
2 tablespoon extra virgin olive oil
2 teaspoon red wine vinegar
Freshly ground black pepper
A dash of salt

Method:

  1. Trim off the fat from the meat. With the help of a sharp knife make lengthwise cuts along the center of the meat to the opposite side but not through it. Spread the meat open and place it between 2 plastic wrap pieces.
  2. Pound the meat into a rectangular slab, start working from the center of the meat and then move out towards the edges. Use the flat side of the meat. Remove the plastic and fold in the narrow ends, if any to make an even and neat rectangle.
  3. Clean the spinach leaves, stack them over each other. Slice them crosswise into thin strips.
  4. Stir together fresh mushrooms, sliced spinach, snipped basil, fine bread crumbs, parmesan cheese, and lightly beaten egg whites in a large bowl.
  5. Spread this mixture evenly all over the pork rectangle. Roll up the pork starting from one of the short sides.
  6. To keep the roll in place tie it with a 10 percent cotton string at 1 to 2 inch intervals. Lightly brush olive oil over the surface of the meat and sprinkle freshly ground black pepper all over.
  7. Arrange medium to hot coals around a drip pan and test for medium heat above the pan. Place meat roll directly over the pan and cover. Grill for 25 to 30 minutes for medium doneness.
  8. An instant read thermometer when inserted in the center of the meat roll should register 155 degree Fahrenheit for medium doneness. Remove the roll from the grill and cover it with foil. Let it stand for about 10 minutes.
  9. For sauce: Combine roasted peppers, the remaining olive oil, minced garlic, salt and wine vinegar in a food processor bowl. Cover and process to get a smooth paste. Transfer the paste in a medium saucepan and cook over medium heat for about 3 minutes.
  10. Before serving remove the cotton strings from the pork roll and slice it. Serve pork slices with sauce. This recipe makes 8 servings.
