Salmon Pinwheel Cooking Recipes with Grilled Salmon Dishes
Ingredients:
For salmon salad:
1 ½ pound fresh or frozen salmon fillet, the fillet should be ½ to ¾ inches thick
1 bay leaf
10 ounce lettuce, mixed greens
½ cup white wine, dry
1 cup cucumber, sliced
2 oranges, peeled and sectioned
¼ cup almonds, sliced
¼ teaspoons freshly ground black pepper
Salt to taste
For creamy orange dressing:
½ cup light sour cream, fat free
2 tablespoon chilled orange juice
½ teaspoon orange peels, shredded finely
½ teaspoon poppy seeds
2 teaspoon sugar
Cooking Salmon Pinwheel Method:
- For salmon pinwheel salad: If you use frozen salmon then thaw it thoroughly before proceeding. Wash the fish and pat dry with paper towels. Cut the salmon fillet into 6 even strips lengthwise and season each strip lightly with salt and pepper. Leave aside.
- Start rolling the salmon strips from the thickest end into pinwheels and secure the ends with a wooden skewer or a wooden toothpick.
- Combine white wine, salt, pepper and bay leaf in a large sauce pan and bring it to a boil over medium heat. Add rolled salmon pinwheels and bring it to a boil. Reduce the heat and cover. Simmer over low flame for 6 to 7 minutes or until done, turn once. You may use a fork to test salmon, if the fish flakes easily consider it done. With the help of a slotted spoon remove the fish from the cooking liquid and discard the liquid. Place the salmon pinwheels in a plate and cover lightly with a plastic wrap. Chill in the refrigerator for 2 to 24 hours.
- For the creamy orange dressing: Stir the sour cream, sugar, poppy seeds, orange peels and orange juice in a medium bowl. To get a desired consistency you may add additional orange juice, 1 teaspoon at a time to make about ½ cup of this dressing.
- To serve the salad: Place orange slices, cucumber slices, salad greens and almonds in 6 different salad bowls. Top creamy orange dressing over the salad mixture and place one salmon pinwheel over each dressing in the bowl. Serve. This recipe makes 6 portions of salmon pinwheel salad.
Health tip:
- Choose salmon preferably without the skin to reduce the total fat content of the recipe. Salmon pinwheel salad can be a great salad choice as the salmon and nuts and oilseeds can form an excellent balance for omega-3 and onega-6 fatty acids.
