Monday Meals for the Working Mom

Preparing daily meals can be a matter of concern for most working mothers due to their busy work schedule. If you are a working mom, you will always be on the lookout for quick to cook recipes that are easy to prepare and yet delicious and nutritious for your kids.

The best way to ensure that you do this is to make weekly meal plans. Prepare a menu which should include recipes that utilize fresh seasonal vegetables. While planning the menus, you should consider similar ingredients so that you need not buy too many things.


You will not have to spend much time in the kitchen if you properly plan for quick dinner meals.

As a working mom you may like the following recipes for preparing fast and nutritious meals for your kids:

  • Preparing chicken soup is very easy and it is a very healthy meal as well. To prepare the soup use chicken broth and water. Add seasonal vegetables and some rice or noodles to make it starch rich.


    Add the chicken when the vegetables are cooked.
  • For making quick dinner meals, chicken casserole is another good recipe for working moms. In an ovenproof dish place chicken, cooked noodles, green peas, and cream of chicken soup. Cover the dish and bake it for 30 minutes at a temperature of 300 to 350 degrees.


    Top up with cheese and again bake for 10 minutes.
  • A quick and easy breakfast option is to cook white oats in milk for 10 to 15 minutes. Oats make for a great breakfast which is filling as well as very nutritious.


    Oats contains a lot of dietary fiber which is very good for your digestive system. The best part is that they take only a few minutes to prepare.
  • For lunch or dinner you can also cook pasta, which is also very easy to prepare and doesn’t take much time if you have all the ingredients at hand.
  • Pizza is another good choice for working moms. Preparing pizza can be a cakewalk for you. Use a pre-baked pizza base and spread cheese over it. After that top up with thin chips of tomato, onion, and cabbage. Cook it in the oven till the cheese has melted. It will hardly take you 15 minutes to prepare this dish.
