Crab Bisque Recipe, Nutritional Value


Bisque is a rich, well-seasoned soup mostly made from sea food. Crab, lobster, oyster and shrimp are some of the more popular bisques. The primary reason these soups are special is that in its original form, all parts that are not eaten like shells, are also used in these soups. Some techniques grind up the shells and use it to thicken the soups. The primary method is to cook the meat in these soups twice.

Ingredients:

You need to make a rich stock before you can make the soup, for the bisque.

Stock Ingredients:

  • 6 cups of crab shells
  • ½ cup white wine
  • 1 large onion chopped
  • 1 carrot chopped
  • 1 celery stalk, chopped
  • 2 tablespoons tomato paste
  • 2 sprigs thyme
  • 1 bay leaf
  • 10-15 peppercorns
  • 2 teaspoons salt
Soup Ingredients:
  • 2 tablespoons unsalted butter
  • 1/3 cup onions chopped
  • ¾ cup white wine
  • 4 cups of the stock
  • ¼ cup white rice
  • 2 tablespoons tomato paste
  • 1 ¼ pound of crab meat, cooked
  • 1 ¼ cup heavy cream
  • Some cayenne pepper
  • Salt to taste

Preparation time: About 2 hours

Directions & serving size:

  1. First make the stock by crushing the shells and cooking them in water with the other ingredients for a few hours.
    Skim the impurities, strain and cool the stock.
  2. Now take a big pot, melt the butter in it. Add the onions and cook them till translucent.
  3. Add the wine, stock, rice, tomato paste and simmer it. Once the rice is cooked, remove it from the heat and let it cool.
  4. Add about 2/3rd of the crab meat to the soup and blend it, rough or smooth, depending on your preference.
  5. Now gently heat the soup and add the cream.
  6. Add the remaining crab meat, salt and cayenne pepper before serving.
  7. This serves 4 people.

Serving instructions:

This soup is served in low bowls that have handles. It is a rich soup and portion sizes are accordingly small.

  • A cup of crab bisque generally has 250 to 280 calories.
  • An 8 ounce serving contains 6 grams of fat, of which 2 grams is dietary fiber.
  • The protein is about 8 grams.
