Chicken Enchiladas Recipe, Nutritional Value


Chicken enchiladas, influenced by Mexican cuisine, are a very popular dish across households. This is also a relatively easy one-dish meal to put together. These are easy to make, nutritious and tasty, a trifecta difficult to ignore. The meaning of the word enchilada means dipped in chili. It is primarily street food but today is served up in many different variations in restaurants too.


Ingredients:

  • Corn or wheat tortillas, 2 per person
  • 4 cups of shredded chicken, cooked
  • 2 cups chicken broth or water
  • 1 cup sour cream (optional)
  • ½ cup green onion chopped
  • ¼ cup cilantro chopped
  • 1 cup onion finely chopped
  • ½ cup green chilies chopped (optional)
  • 1 pound cheese or low fat cheese or cottage cheese
  • ¼ cup butter
  • ¼ cup flour
  • Vegetable oil
  • Sauce ingredients:
  • Tomatoes or canned tomatoes
  • Chopped chilies
  • Salt and pepper to taste

Preparation time: 30-40 minutes

Directions & serving size:

  1. Preheat your oven.
    Warm tortillas on the stove top and keep them warm.
  2. Mix the chicken with the minced and chopped vegetables and stuff this mixture in the tortillas and place it open side down in the baking dish.
  3. You can use a readymade sauce to pour over these tortillas or create one from melting butter, adding the cream, chilies and broth. Pour the sauce to completely cover the wrapped enchiladas.
  4. Now grate the cheese over these enchiladas.
  5. Bake them in the oven till the cheese melts.

Serving instructions:

  • Sprinkle with some more cheese, cilantro, salsa or salad and more sour cream just before serving.
