Ginger Chicken Recipe With Rice And Noodles
Chicken Rice Ingredients
4 chicken breast, boneless, skinless, cut in half
3 teaspoon fresh ginger, grated
4 ounce dried rice noodles
4 tablespoon green onions or scallions, chopped finely
1 cup carrots, peeled and chopped
6 cloves of garlic, peeled and minced
2 tablespoons fresh lemon juice
1 teaspoon fresh lemon peel, shredded finely
4 tablespoon peanuts, chopped coarsely
6 teaspoon olive oil, preferably extra virgin
¼ teaspoon salt
3 tablespoon cilantro
Rice Noodles Cooking Method
- Mix the grated ginger along with the minced garlic, chopped scallions, salt and 2 teaspoon olive oil in a small bowl. Using your fingers rub this mixture evenly onto the chicken.
- Place the prepared chicken directly over a rack of an uncovered grill, over medium coals. Cover and grill the chicken until it turns tender and is no longer pink or for about 14 to 15 minutes. Turn the chicken once halfway through grilling to ensure even cooking. When an instant read thermometer reads 170 degree Fahrenheit the chicken is cooked.
- Remove the chicken from the grill and make thin diagonal slices. Leave the chicken slices aside.
- Cook the rice noodles in a large saucepan for about 5 minutes or till the noodles are tender. Add the chopped carrots and when it is done drain the noodles and carrots in a strainer and place the strainer under running cold water. Drain it once more and snip the cooked noodles into short lengths with the help of a kitchen scissors.
- Mix the fresh lemon juice and lemon peel and remaining olive oil in a medium bowl. Add the snipped noodles, carrots and cilantro. Toss well to coat.
- Divide the noodle mixture equally among 4 different bowls. Arrange thin chicken slices evenly over the noodle mixture. Garnish with coarsely chopped peanuts and serve immediately.
