Partytime Berry Cake Recipes with Cake Mix
Ingredients:
3 cup fresh berries (you may choose the berry you love or prefer in a short cake from blueberry, strawberry, blackberry or raspberry)
1 2/3 cup all purpose flour
2 tablespoon crystallized ginger, finely chopped
1 tablespoon granulized sugar
¼ teaspoon baking soda
2 teaspoon baking powder
½ cup buttermilk, made from low fat cow’s milk
3 tablespoon butter, frozen
1 egg, whole
4 ounce light whipped dessert topping, frozen
¼ cup sour cream, fat free
2 tablespoon sugar, granulated (optional)
Sugar, powdered and sifted (optional)

Cake Cooking Methods
Method:
- Preheat the oven to 425 degree Fahrenheit. Lightly coat a baking dish with cooking spray and set aside.
- For shortcakes: Take a medium bowl and stir in 1 tablespoon granulated sugar along with all purpose flour, baking powder and baking soda. Cut in the butter using a pastry blender until the mixture resembles like coarse bread crumbs. Combine egg and buttermilk in a small bowl. In the center of the flour mixture make a small well and add the egg and buttermilk mixture all at once. Stir well until all the ingredients are well moistened.
- Pat this moistened dough on a lightly floured surface to about ½ inch thickness. With the help of a round cookie cutter or a star shaped cookie cutter cut the patted dough into round or star shapes. Reroll the scraps if necessary and cut again to get one or two more shapes.
- Place them on the prepared baking dish and bake for about 8 to 10 minutes. As they turn golden brown remove from oven and let it stand on a wire rack for 5 minutes.
- Take a small bowl to combine the berries and crystallized ginger. If desired you may add 2 tablespoons granulated sugar.
- Thaw the whipped dessert topping. Divide the shortcakes in two equal halves. Combine the sour cream along with whipped desert topping in a small bowl.
- For serving: Place the bottom of the shortcake on a dessert plate and top it with berry mixture and whipped topping. Place the tops of the shortcake on these mixtures and serve. You may garnish the ginger shortcakes with powdered sugar if desired. This recipe makes 10 servings.
Health tip:
- Use fat free or reduced fat buttermilk, whipped dessert topping, and sour cream. If you use these products with full fat it will increase the calories and fat content of the recipe.
- If the berries are sweet enough and if you prefer a little tangy taste along with the sweet taste of the berries then skip sugar in step 5.
- If you have frozen egg product then you may use ¼ cup of egg product instead of 1 fresh, whole egg.
