Cream Cheese Potato Soup

Cream cheese potato soup is one of the most popular soups in the USA, and is widely served in restaurants, steakhouses and diners. The cheese that is typically used to prepare cream cheese potato soup is smoked Gouda. However if Gouda cheese is not available, another alternative could be Velveeta - a processed cheese.


  • Butter : 4 tablespoons
  • Red potatoes: 6(small size, diced and soaked in ice water so as to avoid browning)
  • Carrots and celery stalks: 2 (finely diced)
  • Dried basil: 1 tablespoon
  • Smoke gouda cheese : 2 cups (shredded)
  • Chicken broth : 6 cups
  • Heavy cream: 2 cups
  • White onion: 1 (diced)
  • Garlic - shallot puree : 1 teaspoon

Preparation time: 40 minutes

Directions & serving size:

  • This recipe will yield approximately 6 - 8 servings
  • To begin with, place a stock pot on a high flame and melt the butter in it. Thereafter, add the carrots, celery and onion
  • Stir the vegetables in the oil till the onions become translucent
  • Add the garlic shallot puree and basil, and after approximately 3 minutes add the diced potatoes. Allow it to cook for another 3 minutes
  • Once cooked, add the 6 cups of chicken broth and allow all the ingredients to cook for 20 minutes
  • The soup will then have to be thickened by adding a mixture of 4 tablespoons each of butter and flour
  • Once the soup has sufficiently thickened, mix in the cream and allow it to simmer for 20 minutes
  • Stir in the cheese and keep stirring till it has melted, and then take it off the flame

Serving instructions: Cream cheese potato soup tastes best if served hot along with some freshly ground pepper and salt for seasoning.
