Healthy Cake Recipes
Fresh fruits when added to any cake recipes change its flavor drastically; same can be done with strawberries. When fresh strawberries are available try fresh strawberry short cake.
Fresh strawberry short cake – For the cake you will require 2 cups flour, 6 table spoons of unsalted chilled butter, 3 tablespoon sugar, 3 tablespoon baking powder, ½ teaspoon salt, ½ teaspoon baking soda, ¾ cup buttermilk and 2 table spoon solid chilled all-vegetable shortening. For the filling you will need fresh strawberries, 2 tablespoon sugar, whipped cream and powdered sugar for garnishing.
Preheat the oven to 450 degrees F and grease a cake pan. Sieve all the dry ingredients together and cut the chilled butter and shortening in small pieces in it and mix everything together with the help of a pastry blender.
Slowly stir buttermilk in this mixture till it forms dough and leaves the sides of the container. Kneed this dough gently and pat it lightly in the cake pat to one-inch thickness and keep in the oven. Bake it for about 20 minutes or till it is golden brown in color. Remove from the oven and let it cool for 5 minutes, invert it and split in to two layers with a knife. Separate the layers and spread whipped cream on it. Now decorate with sliced fresh strawberries and powdered sugar. Cover the lower layer with the other loaf of cake. Cut in triangle pieces and serve.
