POTATO
Solanum tuberosum

The potato is one of the largest consumed vegetables in the world. It is an important source of carbohydrates, and when unpeeled it also has a substantial amount of Vitamin C. the healthiest way of consuming potatoes is to boil them with their skins intact, as this results in the least loss of nutrients as compared to frying. When cleaning potatoes it is important to remove any green areas from the peel because they contain a toxic alkaloid called solanine.

Potato juice is most frequently combined with lemon or carrot juice to improve its flavor and therapeutic properties.

Potato juice has successfully been used for controlling eczema. It also has a soothing effect on the gastric tract and is used for relieving duodenal and gastric ulcers. The juice may even be used externally for treating minor infections and blemishes.

PINEAPPLE
Ananas sativus

Pineapple contains a protein digesting enzyme mixture called bromelain. Pineapple juice is useful in dissolving mucus and aiding recovery from tuberculosis. It is also good for heart conditions, as it reduces the time taken to coagulate blood. It is also useful for women suffering from painful menstrual cramps.

Pineapples are good sources of Vitamin C and may be used to relieve sore throats and bronchitis. The best way to use the plant is to buy the ripe fruit and juice it. Canned and bottled juices greatly lose out on the nutritional properties.
