Healthy Vegetarian Diet


There are thousands of people across the globe who are switching over to vegetarianism, on a daily basis, for various reasons, which could include religious, ethical, economical or cultural factors. Yet others choose to become vegetarians, because they believe that doing so will help them lead a healthier life. This is a common belief that is validated by scientific research and doctors strongly recommend that people suffering from cardiovascular diseases, diabetes or other serious problems should cut down on their intake of foods that are made using animal products.

Vegetarianism is usually a very healthy lifestyle option, as long as you follow a healthy vegetarian diet that provides all the nutrition that your body requires. A good vegetarian diet should be capable of providing all the nutrition that may be required by children, adults, teenagers and even women, pregnant or are breastfeeding. A healthy vegetarian diet plan needs to be well balanced and should include a variety of foods, such as fruit and vegetables, grains, seeds, nuts, beans, pulses, small amounts of fats and dairy products.

Unfortunately, because of the hectic lifestyle that most of us follow, we care more for convenience, than health and nutrition, while choosing our food options.

Eating prepackaged meals from a supermarket or ordering a takeaway have become very common occurrences for most of us. Unfortunately, the truth is that most of such frozen or takeaway foods are usually very high in fat and sodium. Their nutritional value is very low as compared to the amount of preservatives that have been added to such foods.

It is quite possible to fix an easy but healthy vegetarian meal that you can prepare at home, from the scratch. Of course, the easiest and the most common recipe that features in almost every healthy vegetarian diet menu is a fresh garden salad. However there are plenty of other nutritious recipes that are very healthy, tasty and are quite easy to fix, such as:

Recipe For Tofu and Mushroom Stew

It is quite natural to think of large chunks of meat and potato, the minute you hear the word stew. However, there are people, who cannot stomach that much meat and therefore, enjoy the taste of a good stew, using vegetarian ingredients

Ingredients:

Dried mushrooms with soaking liquid 1 ounce

White mushroom, diced 1 ½ cup

Tofu, drained and cubed 1 lbs

Potatoes, peeled & chopped 2 medium

Onion, finely chopped 1 bulb

Garlic, minced 1 clove

Peanut oil or vegetable oil 1 tablespoon

Soy sauce ½ tablespoon

Star anise 1

Cinnamon 1 stick

Vegetable stock (or water) 1 cup

Method:
  • In a large pot, heat the oil and sauté the onions for about 5 to 6 minutes, or, till they turn transparent.
  • Then add the garlic and allow it to cook, for a couple of minutes more.
  • Add the potatoes and then the vegetable stock or water and allow them to come to a boil.
  • Once the water begins to boil reduce the heat just a bit and cook the stew for about 10 minutes on a low flame, till the potatoes become a bit tender
  • Then add all the mushrooms, the cinnamon, the star anise, as well as the soy sauce to the pot, and cook the stew further.
  • After 10 minutes of so, add the cubes of tofu and continue cooking the stew.
  • Cover the pot with a lid and allow its contents to simmer together, for at least half an hour or more, so that the flavors present in all the ingredients blend well.
  • This recipe can be made hours or even a day before you serve it and can be refrigerated if necessary. However, it should be warmed thoroughly, before serving.
