Salads are known to be extremely nutritious and, when served with the right salad dressings – of which there are so many to choose from, can be extremely delicious as well. When it comes to healthy vegetarian diet, one needs to choose carefully between a vegan diet and a vegetarian diet, as they are often confused. A vegan diet is one that not only excludes any kind of meat, but will also require abstaining from any kind of animal products. However, a vegetarian diet is one that will forbid the individual from consuming any kind of meat, but animal products such as milk, eggs and other foods of the kinds may be consumed. There is a lot of talk about how vegetarian diets do not cater to all the nutritional needs of the body – especially proteins. However, this is completely untrue as vegetarians are able to replenish their protein requirements in the body through a healthy consumption of nuts. They will, however, need to make sure that their diet constitutes a wide variety of foods in order to make sure that they get all the required nutrition.  

Just because a meal lacks any kind of meat or meat products does not mean that it cannot taste as good. This is probably the first statement that someone that has just switched onto being a vegetarian should come to understand. All you need to do is peel a pumpkin and remove the seeds before cutting each piece into 1 inch cubes. Once done, melt 3 tablespoons of butter in a large base pan and add about one thinly sliced onion as well as 1 minced clove of garlic and heat it on a low fire.  Add the pumpkin pieces and cook it for about 2 to 3 minutes. Once done, add 3.5 cups of vegetable broth and increase the heat to a medium flame. Seasoning can be added in the form of ½ teaspoon ground ginger, 1 tablespoon of lemon juice, 1 tablespoon of chopped cilantro and 3-4 strips of orange rind. Continue mixing the contents while adding some salt and pepper. Let it simmer over for about 20 minutes, or right up until the pumpkin is tender. Discard the orange rind from the mixture and allow the soup to cool for a bit before adding some milk and reheating gently. A little more salt and pepper can be added, however that is completely your choice and in order to meet your taste preferences. For dressing up the dish, one can always use garnishing with a swirl of yogurt.
