KaleKale is a green leafy vegetable that belongs to the same family as the cabbage and Brussels sprouts, i.e.
the Brassica family. Unlike the other leafy vegetables green kale grows even in colder climatic conditions. This leafy vegetable might grow better in a light frost.
These leafy vegetables are known to be rich in phytonutrients which contain sulfur and provide protection against several illnesses.
Kale is especially helpful in preventing certain types of cancers such as breast cancer and ovarian cancer. There are glucosinolates present in Kale which help prevention of these cancers. Though there is no proper establishing of the relation between consumption of Kale and prevention of cancer. Several scientists have pointed out presence of glucosinolates and cysteine sulfoxides present in the plant which work as detoxification agents and reduce the effects of carcinogenic substances inside liver.
Kale also provides protection against rheumatoid arthritis, Vitamin C in Kale helps prevent this disease, it also provides protection against anther form of arthritis called poly-arthritis. Poly-arthritis involves two or more joints in degenerative state.
Kale also helps lower cataract risk. Carotenoids present in Kale help reduce cataract risk by protecting eyes from harmful effects of ultraviolet rays. Zeaxanthin and lutein in Kale helps reduce this risk. Studies found out that people who had lutein rich diets were at 50% lesser risk of contacting cataract than those who did not consume lutein.
Presence of abundant Vitamin A in Kale can also help in lung health promotion. In case of people who smoke, first hand or second hard, the carcinogen benzopyrene causes Vitamin A deficiency, consumption of Kale might be able to repair this deficiency and help people guard themselves against lung inflammation. This protects them against emphysema. Healthy portions of Vitamin A in food might be the reason why some smokers live till the age of 90.
Vitamin C abundance found in Kale also helps in anti-oxidation and provides help and support to the immune support. Therefore, Kale is a good health food; care should be taken to include this food regularly in daily diet. There are many more advantages associated with daily consumption of Kale, this fiber rich leafy vegetable will provide you nutrients that lack in normal diet.
In order to use Kale it is extremely important that it is washed thoroughly before use.
You can use Kale as a healthy topping for home made pizzas, Kale can be used with Pasta or to be eaten simply sautéed with lemon juice. This vegetable has rich taste and therefore makes it thoroughly enjoyable, you can use just the leaves or both leaves and stalk of Kale as the recipe demands.
