Rice With Healthy Fresh Cherries
No. of Servings: 8 servings Preparation time: 15 minutes Cooking time: 40 minutes
Cherry Rice Ingredients: - Wild rice- 6¼ oz.
- One cup of unpeeled and finely chopped apple (optional)
- One cup of finely chopped green bell pepper
- Half a cup of chopped celery
- Finely chopped dried cherries- 2/3 cup
- Two tablespoons of soy sauce
- Two tablespoons of water
- Two teaspoons of sugar
- Two teaspoons of cider vinegar
Method:
- Cook the wild rice as per the instructions on the package. Do not add margarine or butter if it has been specified on the package to do so.
- Once the rice has been cooked, spread it out to cool, on a cooking sheet. Leave the rice aside for about 10-15 minutes.
- Take a medium sized bowl and add the finely chopped cherries, celery, green bell pepper and the chopped apple. Mix all the items together and set the mixture aside.
- Take a small bowl and in that you will need to mix together the cider vinegar, sugar, water and soy sauce.
Mix the ingredients well till all the sugar has dissolved. - Now take the cherries and apple mix that has been set aside and to it add the rice and the soy sauce and vinegar mixture. Stir well so that all the ingredients are well coated.
- Serve at room temperature.

- Instead of apples you can go in for some other fruits.
- This make an ideal snack for those that are either weight conscious or are on a weight loss regime.
- While you are purchasing wild rice, you may come across the light brown variety, known as wild rice mix, as well as the more common dark variety.
This variety of wild rice (wild rice mix) is not same as the Native American one.
- It has a mild flavor and a lighter color and it takes a lesser time to prepare. If you purchase this particular variety of rice, then cook it in the same manner as you would cook long grained brown rice.
