Honey Yogurt Recipes with Fresh Figs
Honey Yogurt Recipe Ingredients:
2 fresh figs, ripe
8 ounce plain or vanilla yogurt, low fat
½ teaspoon vanilla extract
1 tablespoon walnuts, chopped coarsely
2 teaspoon honey
Fresh lemon peel, shredded finely (optional)
Method:
- To strain the yogurt set a paper coffee filter or a cotton cheese cloth over a medium bowl. Spoon yogurt over the coffee filter or cotton cloth and cover. Place in the refrigerator overnight or for at least 8 to 24 hours. Refrigeration will drain all the possible water from the yogurt. Thus the yogurt will thicken and give a soft cheese. Discard any liquid in the bowl. Place the thicken yogurt in another small bowl.
- Cut the figs coarsely and leave aside. Mix vanilla extract in the thicken yogurt and fold in the chopped figs. Spoon this mix into 2 small dessert bowls. Sprinkle with chopped walnuts and drizzle each serving with honey. You may also garnish the dessert with fresh lemon peel before serving. This recipe makes 2 servings. You may need to do a minute pre-preparation for this dessert as it involves thickening of the yogurt. Besides this recipe can be a quick and light choice after a heavy meal.
Health Tip:
- Preferably use low fat or reduced fat yogurt to keep the calories and fat level of this recipe low.
- Instead of discarding the liquid from yogurt, you may use the liquid to make buttermilk or sweet yogurt.
- This is a low calorie, low fat, low carbohydrates and health friendly recipe as it provides about 155 calories and 4 gm of total fat per serving. Fresh figs with yogurt and honey provide about 24 gm carbohydrate per serving. So if you are on a low carbohydrate diet then you may opt to skip the honey from the recipe.
- You may use fresh apricots in place of fresh figs. Dried apricots and dried figs can also be used in this recipe is availability of fresh figs and apricots is a problem.
- To make this recipe diabetes friendly, eliminate honey from the recipe. You may add a natural sweetener or an artificial sweetener, if desired to give a sweet touch to the yogurt. But as the fruit are sweet you may opt for not using any honey or artificial sweetener at all.
- You may use mixed chopped nuts like almonds, cashew nuts and pistachio nuts along with walnuts in the last step to garnish the yogurt.
