Tomato Pepper Eye-catching Salad

Tomato And Pepper Salad Ingredients:

1 ½ large yellow pepper, seeded and thinly sliced into rings
½ pound or about 1 ½ medium tomatoes
Watercress, optional
1/8 cup low fat or fat free Gorgonzola cheese, crumbled
2 teaspoon fresh basil
½ teaspoon sugar
1 tablespoon vinegar, white wine
½ tablespoon chives
1 tablespoon olive oil
1 teaspoon Dijon style mustard, low fat
Dash of black pepper, freshly ground
Salt to taste

Method:

  1. For team color tomato pepper salad: Cook yellow pepper rings in boiling water in a covered skillet for a minute or two or until the peppers are tender and crisp. Drain the water and let the peppers cool. Place the peppers in a small bowl and cover the bowl with a plastic wrap. Chill the peppers in the refrigerator for up to 1 to 24 hours. Pack tomatoes, pepper rings, herb Dijon vinaigrette (recipe follows below), cheese and watercress in separate containers (insulate coolers with ice picks) to tote. Cut tomatoes into wedges before serving. Place the tomato wedges and pepper rings on a platter and top them with cheese. Shake the dressing well to mix and drizzle it over the salad. You may garnish the salad with watercress if desired. This recipe makes 4 side dish servings.
  2. For herb Dijon vinaigrette: Combine 1 tablespoon olive oil along with white vinegar, fresh snipped chives, fresh snipped basil, ground black pepper and Dijon style mustard in a screw top jar. Cover the jar and shake well so as all the ingredients mix completely. Chill in the refrigerator for up to 3 days.
