Spinach-Stuffed Flank Steak Recipes With Gourmet Steaks

Stuffed Flank Steak Ingredients:

20 ounce frozen spinach, thawed, well drained and chopped
2 pounds flank steak beef, extra lean
½ cup sun-dried tomatoes, not oil packed
4 tablespoon fresh basil, snipped
4 tablespoon Parmesan cheese
¼ teaspoon salt
¼ teaspoon black pepper, freshly ground

Method:

  1. Place the sun dried tomatoes in a medium size bowl and add enough hot water to the bowl so that the tomatoes are completely submerged. Cover the bowl and let it stand for about 10 to 15 minutes. Drain well. Cut tomatoes into small chunks. Leave aside.
  2. Divide the meat into two equal halves. Trim any visible fat. Score both sides of the flank beef in a diamond pattern by making diagonal shallow cuts at about one inch intervals. Place the scored meat between two strong plastic wraps.
  3. Pound the meat from the center towards the edges with the help of a meat mallet (use the flat side) to get two 12×8 inch rectangles. Remove the meat from the plastic wraps. Sprinkle both the meat rectangles   with salt and freshly ground black pepper.
  4. Spread the chopped spinach and softened tomato pieces over the meat. Sprinkle the parmesan cheese and snipped basil over it. Roll each steak up from the short side. Secure the roll with wooden toothpicks at 1 or 1 ½ inch intervals.
  5. Cut the meat between the toothpicks to get 8 one inch slices from each roll that is 16 slices in all.
  6. Place all the slices (or one batch that is 8 slices) on an unheated rack of a broiler pan in such a way that it’s cut side faces down. Broil until desired doneness 3 to 4 inches away from heat. Turn the slices once carefully halfway through the broiling process.
  7. For medium to rare doneness allow broiling for 10 to 12 minutes or 145 degree Fahrenheit . For medium doneness allow broiling for 15 to 16 minutes or 160 degree Fahrenheit. Remove the toothpicks before serving. Broil the next batch (if the other 8 slices are remaining). Serve immediately. This recipe makes 8 servings.

  • Thaw the spinach at least 20 minutes before proceeding with the method. Make sure to drain the spinach well and then chop it. Do not chop it first and then rinse or drain it (vice versa).
