½ can Italian style stewed tomatoes (you may even use Cajun style or Mexican style stewed tomatoes)
¼ cup Italian style tomato paste
¼ teaspoon hot sauce
8 ounce stir fried vegetables, frozen
Freshly ground black pepper to taste

Method:

  1. Trim away all the visible fat from the steak and cut it into 4 serving size pieces. Lightly sprinkle the salt and freshly ground black pepper according to taste.
  2. Place the prepared steak pieces in a medium size slow cooker.
  3. Combine the Italian style stewed tomatoes, Italian style tomato paste, and hot pepper sauce in a medium bowl. Pour this mixture over the meat in the cooker.
  4. Stir in all the frozen vegetables. Cover the cooker and cook on high heat setting for 4 to 5 hours or low heat setting for 7 to 8 hours.
  5. Cook the noodles in lightly salted boiling water as per the directions on the package. Drain and rinse under running water. After all the water has drained transfer the noodles into a serving platter. Top with hot pepper steak.
  6. Serve immediately. This recipe makes 4 servings.

Health Tip:

  • As the recipe name suggests this steak recipe is very easy and simple to prepare. Mainly because the entire list of ingredients are ready to use; be it Italian style tomatoes, tomato sauce or frozen vegetables.
  • This recipe provides 303 calories, 30 gm proteins, 29 gm carbohydrates, 4 gm sugars, 2 gm dietary fiber and 6 gm total fat per serving.
  • This recipe can be considered a high sodium recipe; this is because it provides 416 mg sodium per serving.
  • If you are on a low sodium diet then besides avoiding salt (in step 1) you should use home made tomato puree and fresh tomatoes instead of canned or packed (as these tomatoes are soaked in brine and therefore loaded with sodium).
  • So-easy pepper steak provides 80 mg cholesterol and 2 gm saturated fats per serving. To decrease these values further use extra lean cuts of red meat and also make sure to trim all the visible fat from the steaks before cooking.
  • Red meat is generally associated with high cholesterol and fat content. If you prefer low fat and cholesterol in your diet then you may go for other lean white meats like de-skinned poultry and fish.
  • Preferably choose whole grain noodles instead of white refined ones for better nutritional value.
