Persimmon Nutrition And Recipe For Streusel

Persimmon Recipe Ingredients:

2 large fresh Fuyu persimmons or Hachiya persimmons
¾ teaspoon apple pie spice or pumpkin pie spice
1½ cup all purpose flour
1¼ cup sugar
1½ teaspoon baking powder
1 egg, whole
1 teaspoon vanilla extract
1/3 cup butter, softened
¼ cup milk, fat free or reduced fat
¼ cup all purpose flour
2 tablespoon butter
Fresh mint leaves, optional
Whipped cream, optional
Fresh persimmon, chopped, optional

Method:

  1. Preheat the oven to 350 degree Fahrenheit.
  2. If you use Fuyu persimmons then rinse the skin, discard the seeds and stem and chop it into ½ inch thick slices. You should have about 2 cups of the slices. If you use Hachiya persimmons then first cut it into 2 parts and scoop its inner content, discard the skin and inner seeds. Mash the pulp with a fork, you should have about 1 to 1 ¼ cup of this puree.
  3. Combine the persimmons with ¼ teaspoon pumpkin pie spice and ¼ cup sugar, leave aside.
  4. Lightly grease a square baking pan and set aside. In another bowl combine baking powder along with 1 ½ cup all purpose flour and leave aside.
  5. Beat 1/3 cup butter in a large mixing bowl with the help of an electric beater over medium speed for about 30 seconds. Add the remaining 2/3 cup sugar and beat further to combine it well. Add vanilla extract and whole egg and beat well. Alternately add milk and flour mixture to the beaten egg mixture and beat on low speed until the mixture turns smooth.
  6. Spread ¾ of this batter in the prepared pan. Over this batter gently spoon the persimmon mixture. Drop the remaining batter with the help of a spoon on top of the filling into the mounds in such a way that it forms a diagonal pattern.
  7. Combine remaining sugar, pumpkin pie spice with ¼ cup flour. Cut in 2 tablespoon butter with the help of a beater until the mixture resembles coarse crumbs. Sprinkle this over the fruit mixture.
  8. Place the baking pan in the preheated oven and bake for about 40 to 45 minutes or until golden brown. After done remove from oven and let it stand for 5 to 10 minutes. Before serving cut it into squares. If desired serve warm garnished with chopped persimmons and dollops of whipped cream. Lastly place a fresh mint leaf before serving. This recipe makes 9 servings.
