Raspberry Custard Brulee Recipe Ingredients

6 cups raspberries
2 cups milk, fat free
4 teaspoons cornstarch
2 eggs, whole, lightly beaten
½ cup sugar
1 teaspoon vanilla extract
4 teaspoon sour cream, fat free or light

Method:

  1. Combine 4 tablespoons of sugar along with the cornstarch in a medium size saucepan for custard. Add the lightly beaten eggs and fat free milk to the pan and cook over medium heat until the mixture begins to bubble.
  2. Stir lightly with a wooden spoon and remove the pan from the heat immediately after the mixture begins to bubble, don’t over cook or let the mixture boil.
  3. Pour the hot custard immediately in a medium size bowl and let it cool at room temperature for about 5 to 10 minutes.
  4. Whisk light or fat free sour cream into the custard bowl. Add the vanilla extract, mix well and cover the bowl.
  5. Place the bowl in the refrigerator to chill for 4 to 24 hours.
  6. Divide the raspberries (if you are using frozen berries then make sure to thaw them 15 minutes prior serving) equally among 8 dessert dishes or goblets. Spoon the chilled custard over the berries and set aside. If the custard has turned too thick then you may add additional fat free milk according to the desired consistency.
  7. For topping: Heat the remaining 4 tablespoons of sugar over medium to high heat in a heavy saucepan or skillet. Cook sugar until it begins to melt, shake the skillet lightly to ensure the even heating of the sugar.
  8. Do not stir the sugar in the skillet. After the sugar melts reduce heat to low and cook it further until it is completely melted and gets a golden brown color. Stir occasionally with the help of a wooden spoon. Drizzle brown caramelized sugar immediately over the custard in each dessert dish. Serve immediately.

Health Tip:

  • If you like very dark brown caramelized sugar then heat it for few seconds more. However if you like mild caramelized sugar then remove the skillet from the heat immediately after desired browning.
  • Raspberry custard brulee recipe can be considered a low calorie dessert recipe as it provides only 150 calories, 29 gm carbohydrates, 5 gm proteins and 2 gm total fats per serving.
  • To reduce the simple sugars and calories of this recipe further, use a heat stable sugar substitute equivalent to ½ cup sugar. Also you may skip the caramelized sugar (last step) if you want to avoid simple sugars in your diet.
