Cinnamon Raisin Apple Pudding Recipe

Apple Pudding Ingredients

2 medium apples. Cooking apples such as Newton Wonder, Bramley or Golden Noble are preferable
¼ cup raisins
1/3 cup cornmeal
1 egg, whole
2 cups fat free milk
2 tablespoon brown packed sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
Cooking spray

Method:

  1. Preheat your oven to 350 degree Fahrenheit. Lightly coat 6 custard cups (6 ounce each) with cooking spray. Place the greased cups in a shallow baking pan. Leave aside.
  2. Heat 1 ½ cup fat free milk in a medium size saucepan over medium heat until it boils.
  3. Meanwhile, combine the cornmeal with the remaining milk in a small bowl. Slowly stir this cornmeal mixture into the hot milk. Whisk gently and cook until the mixture again returns to boil, stir constantly. After the mixtures reaches the boil, reduce heat and let the mixture simmer for 5 to 7 minutes on low heat until it turns thick, stir constantly.
  4. Remove the cornmeal-milk mixture from the heat. Add the brown sugar, salt and cinnamon and  stir well.
  5. Beat the egg with the help of a fork in a large bowl. Stir the hot mixture into the beaten egg bowl gradually. Add the raisins and apples and stir lightly.
  6. Divide this mixture among the prepared six custard cups. Place the baking dish along with the custard cups in the oven. Allow them to bake for about 30 minutes. After 30 minutes check the pudding by inserting a knife at the center, if it comes out clean consider it done. Remove the pudding from the oven and cool it on a wire rack for about 15 minutes. Serve warm. This recipe makes 6 servings.
