Banana Cream Recipe And Rasberry Tarts

Rasberry Tart Recipe Ingredients:

1 cup raspberries
1 medium ripe banana, mashed or 1/3 cup ripe mango, mashed
8 ounce sour cream, light or fat free
1 teaspoon granulated sugar
1 ¼ cup all-purpose-flour
1/3 cup shortening
¼ teaspoon salt
4 tablespoon water divided
Semisweet chocolate, optional

Method:

  1. For banana cream tarts: Prepare the pastry dough. Preheat the oven to 450 degree Fahrenheit. Divide the pastry dough into 10 equal portions. Lightly flatten one portion of dough on a flat lightly floured surface using your hands. With the help of a rolling pin roll one portion of the dough from the center to the edges to form a circle of about 3 ¼ to 3 ½ inch in diameter.
  2. Take a three inch tart pan and line it with pastry. Press the rolled pastry into the fluted sides of the tart pan. Trim the edges and prick the bottom of the pastry with a fork. Repeat with other 9 portions of the pastry. Line the pastries with double thickness foil.
  3. On a large baking dish place pastry lined tart pans and bake in the preheated oven for about 8 minutes. Remove foil and place the tart pans again in the oven and bake for more 5 to 6 minutes or until the pastry shells get a nice golden brown color. After done, cool the pans on a wire rack for 5 to 10 minutes and then carefully remove shells from the pans.
  4. For filling: Stir sour cream, mashed banana or mango in a medium bowl. Add sugar if desired to sweeten the mixture. Divide this filling among all the 10 pastry shells and top the filling with fresh raspberries or banana slices as per your choice. If desired, garnish with chocolate curls.
  5. For tart pastry: Stir all-purpose-flour and salt together in a medium bowl. Cut shortening using a pastry blender in the flour and salt mixture to get pea size pieces. Add a teaspoon of cold water over a part of the flour mixture and gently toss the mixture with a fork. Skillfully push the moistened dough at the sides of the bowl and repeat the same process (small amounts at a time) until all the flour is not moistened to form dough into a ball. You may need approximately 4 to 5 tablespoons of cold water to moisten the entire flour. This recipe makes about 10 servings.
