Rye Recipes For Bread, Rice and Rye Spirals

Rye Spiral Ingredients:

¼ cup orange peel, candied
¼ cup orange marmalade, reduced sugar
2 ¾ cups all purpose flour
1¼ cup rye flour
1 package dry yeast, active
2 egg whites
1 cup water
1 teaspoon caraway seeds
¼ cup sugar
¾ teaspoon salt
¼ cup cooking oil

Method:

  1. Combine yeast and all purpose flour in a small bowl, stir well and leave aside.
  2. Preheat a medium saucepan over medium heat, stir in water, oil, sugar, and salt and just heat for few seconds to make the mixture warm, do not boil this mixture.
  3. Add egg whites and oil mixture to the flour mixture. With the help of an electric mixture beat this mixture on low to medium speed for 30 to 40 seconds, scrap the sides of the bowl constantly. Beat on high speed for about 3 minutes.
  4. Stir in rye flour, caraway seeds, remaining all purpose flour, and orange peel with the help of a wooden spoon. Turn out this into dough on a lightly floured surface.
  5. To make the dough moderately stiff which is elastic as well as smooth, kneed for up to 7 to 8 minutes using the remaining all purpose flour. Shape this soft dough into a shape of a ball. Place this ball in a lightly greased bowl, turn once after 15 minutes. Cover the bowl and let the dough rise in a warm place. After the dough is almost double in size, (after about an hour) punch the dough and turn out in a lightly floured surface.
  6. Divide the punched dough into two equal halves and place them again in the lightly greased bowl. Cover the bowl and let it rest for 10 minutes. Grease 2 baking sheets meanwhile.
  7. Divide each half of the dough into 8 pieces and roll each piece into a 12 inch long rope on a lightly floured surface. Coil each end of the rope to form a snugly ‘S’ shape. Place these rolls on the prepared baking sheets. Cover them and leave aside in a warm place to rise. After about 30 minutes the ropes will rise and get nearly double in size.
  8. Preheat the oven to 375 degree Fahrenheit and bake the ropes for 14 to 15 minutes or until they turn golden brown in color. After done let them stand on a wire rack for 5 minutes.
  9. Lightly brush the rolls with orange marmalade spread while they are warm. Serve warm. This recipe makes 16 servings.
