Mocha Cake Recipes With Health Benefits Of Berries

Mocha Cake Ingredients:

1/8 cup all purpose flour
¼ cup granulated sugar
¼ cup water
¼ cup unsweetened cocoa powder
1 ½ ounce semisweet or bitter chocolate, chopped
1 egg yolk
2 egg whites
1 tablespoon instant coffee powder or ½ tablespoon instant espresso
½ teaspoon vanilla extract
1/8 teaspoon baking powder
2 ounce light whipped frozen dessert topping, thawed
Nonstick cooking spray
¾ cup fresh raspberries

Method:

  1. Preheat the oven to 350 degree Fahrenheit. Lightly coat a medium size spring foam pan with non-stick cooking spray and leave aside.
  2. Stir together granulated sugar, instant espresso or instant coffee powder and water in a medium saucepan. Cook the contents stirring constantly over medium heat until the mixture is almost boiling and the sugar is completely dissolved. In this hot mixture stir in the chopped bitter or semisweet chocolate and heat further over low flame until the chocolate melts. Remove the pan from heat and set aside.
  3. In a small bowl place egg yolks and beat them lightly. Gently stir in the egg yolks in the warm chocolate mixture. Add vanilla extract and stir. Leave aside. At this stage the mixture might give a grainy appearance but as you add beaten egg whites it will get its shine back.
  4. Stir together all purpose flour, cocoa powder and baking powder in a medium bowl. Add this mixture in the chocolate mixture and mix to get a smooth consistency.
  5. Take egg whites in a large bowl and with the help of an electric beater beat them until they form stiff peaks (the tip of the peaks should stand straight). Stir in the beaten egg white mixture in the chocolate mixture small amounts at a time until light. Spread this mixture in the baking pan and place the pan in the preheated oven.
  6. Bake for about 25 to 30 minutes or till the top layer springs backs when touched lightly. Remove from the oven when done and cool the pan over the wire rack for 5 minutes. Loosen the sides of the pan and remove the cake in a serving platter to cool completely.
  7. Cut the cake into wedges before serving. You may also choose to serve individual servings in different dessert plates dusted with cocoa powder. Top the cake with thawed whipped dessert topping and chopped fresh berries.
