Mint Pesto Baked Recipes
Baked Recipe Ingredients:
1 ½ cup fresh mint leaves
¾ cup fresh basil leaves
1 large garlic clove, quartered
2 tablespoon lime juice, freshly extracted
1 tablespoon orange zest, freshly grated
¼ cup toasted walnuts
¼ teaspoons freshly ground black pepper
¼ teaspoon salt
3 tablespoons olive oil, preferably extra virgin
- Mix all the ingredients except for olive oil in a food processor. Cover and process the contents over medium speed for a minute. With the processor on, on low speed drizzle olive oil slowly and continue to process to get a smooth paste. Remove the mint pesto in a serving bowl and serve along with your favorite accompaniment. You may even place mint pesto in the refrigerator to chill for 4 to 24 hours before serving. This recipe makes ¾ cup of mint pesto.
- Stir in mint pesto along with chilled pasta and fresh chopped strawberries to make a fresh summer meal.
- You may also mix mint pesto along with soft goat cheese and spread it on a crostini. Mint pesto can also be served alongside of burgers, grilled breads or sausages.
- For variety brush mint pesto over grilled chicken, fish, lamb chops, pork, other sea foods or vegetables.
