Kidney Beans And Fresh Beans Recipe For Snacks

Fresh Beans Recipe Ingredients:

1 pound beef, ground
1 pound beef sirloin, cubed
3 cans black beans
1 can beef broth (about 14 ounce or 2-3 cups)
3 garlic cloves, minced
2 large onions, chopped
1 bottle dark beer
½ cup sugar, brown
14 ounce can diced tomatoes with juice
2 cans of 6 ounce tomato paste
1 cup black coffee, strong
2 tablespoon vegetable oil
1 tablespoon cumin, ground
1 teaspoon oregano, dried
1 teaspoon salt
1 teaspoon coriander, ground
1 teaspoon cayenne pepper, ground
1 tablespoon cocoa powder
2 fresh jalapenos, chopped
For the marinade:
1 tablespoon sugar, brown
2 teaspoon cumin, ground
1/3 cup coy sauce
2 cloves garlic, minced
1/3 cup vegetable oil
1 tablespoon tomato ketchup

Method:

  1. Combine all the marinade ingredients in a medium bowl and mix well. Marinade the beef sirloin cubes in the marinade for minimum 4 to 14 hours. If you plan to make halftime baked beans for lunch then it shall be ideal to marinade the sirloin cubes overnight. Place in the refrigerator.
  2. Remove the beef cubes from the fridge an hour before you proceed, to thaw.
  3. Heat a large skillet over medium heat. Add vegetable oil in the skillet. As the oil becomes smoky add the onions and sauté for about 3 to 4 minutes or until they are soft. Stir in ground beef and garlic and cook beef on medium heat until it is browned. Remove the cooked beef and onions in a separate bowl and leave aside.
  4. Drain sirloin from the marinade to remove the liquid portion. Cook the cubes in the same skillet thoroughly until well browned.
  5. Add the beef and onion mixture to the sirloin cubes, stir well. Stir in the remaining ingredients that is diced tomatoes with juice, tomato paste, beef broth, cumin, beer, coffee, brown sugar, cocoa powder, ground coriander, jalapenos, oregano, cayenne pepper and salt. Cover and cook over medium heat till the start of the second quarter. Add black beans at the start of the second quarter and cook on low heat until halftime. Serve hot with tortilla chips and low fat sour cream. This recipe makes 6 servings.

Health Tip:

  • Steamed unpolished rice or whole wheat bread is a wiser accompaniment choice compared to sour cream and tortilla chips.
  • Substitute red beef and sirloin beef cubes with lean cuts of beef. This change will help to reduce the total calories, total fats, saturated fats and cholesterol content of the recipe.
  • To reduce the sodium content of the recipe use fresh chopped tomatoes instead of canned tomatoes and tomato paste.
