Crepe Cup Recipe Ingredients:

11 ounce canned mandarin oranges (with juice), drained and chopped
¼ teaspoon ginger, ground
2 tablespoon orange marmalade, low sugar
½ cup all purpose flour, white
1 egg, whole
¾ cup milk, fat free
1 cup red or green grapes, rinsed and quartered
1 cup canola oil
1/8 teaspoon salt
Non-stick cooking spray

Method:

  1. Preheat the oven to 400 degree Fahrenheit. Lightly coat a non-stick griddle and 20, two inch muffin cups with non-stick cooking spray. Heat the griddle and leave the muffin cups aside.
  2. In a small bowl, whisk all purpose flour along with the eggs, salt, milk, and oil until all the ingredients are well combined. Spoon 1 tablespoon of this mixture for each crepe on the hot griddle shaping into small circles, pouring slowly.
  3. Make about 4 to 5 crepes at a time, cooking them for about 40 to 60 seconds over medium heat or until their tops are dry and bottoms golden brown in color. Transfer the cooked crepes using a wooden spatula over the paper towels to absorb any oil, place the golden side up. You may trim the edges if desired.
  4. As the crepes are warm enough to handle place them in the greased muffing cups, brown side down. You may need to pleat the crepes if necessary to fit them in the cups. Bake the creeps in the preheated oven for about 10 to 12 minutes or until the edges of the crepes are firm. Remove the cups from oven and cool them over a wire rack for 10 minutes. Remove the crepes from the muffin cups carefully after they are warm enough to handle. Spoon gingered fruit into the crisp crepe cups before serving.
  5. To prepare gingered fruit: In a medium bowl combine ground ginger along with low sugar orange marmalade. Gently stir in the prepared mandarin orange sections and red or green seedless grapes. Cover the bowl and place in the refrigerator to chill until it is time to serve. This recipe makes 20 servings.
