Recipe for Creamy Chicken Enchiladas

Creamy chicken enchiladas can be an excellent quick supper recipe that is easy to make.

Chicken Enchiladas Ingredients:

2 chicken breast halves, boneless
4 flour tortillas, about 10 inch in size
½ cup sour cream
½ onion, chopped
½ cup cheddar cheese, shredded
½ can tomato sauce, around 15 ounce
½ clove garlic, minced
1½ teaspoon parsley, dried
¼ teaspoon oregano, dried
¼ teaspoon black pepper, freshly ground
¼ cup water
1½ teaspoon chili powder
2 tablespoon + 2 teaspoon green bell pepper, chopped
12 ounce jar taco sauce
¼ cup + 2 tablespoon cheddar cheese, shredded
Salt to taste

Method:

  1. Preheat the oven to 350 degree Fahrenheit.
  2. Cook chicken in a medium nonstick pan over a medium flame till its juices run clear and the chicken is no longer pink. Drain any excess fat and cut the chicken in medium to small cubes. Return the chicken cubes back to the nonstick pan, add sour cream, onion, parsley, cheddar cheese, oregano, and freshly ground black pepper. Heat over a medium flame till the cheese melts.
  3. As the cheese melts stir in water, tomato sauce, salt, garlic, green pepper and chili powder. Toss to mix all the ingredients well. Heat for 1 minute or till the contents is well heated.
  4. Divide this mixture into four parts and roll each part into tortillas. Place them in a medium size baking dish and sprinkle the remaining cheese and taco sauce. Bake uncovered for about 20 minutes in the preheated oven. As the cheese melts and get a light golden brown color remove from the oven and let it stand for 5 minutes. Serve warm. This recipe serves 4 If desired you may serve the sour cream separately instead of adding in the recipe.

Health tip:

  • Use reduced fat or low fat cheddar cheese to decrease the total fat content of the recipe.
  • Preferably use only skinless chicken breasts for the recipe and trim all the visible fat before proceeding with the recipe. This will help to decrease the cholesterol and saturated fat level in the chicken. The fat layer is beneath the skin of the chicken.
  • Check the sodium level of tomato sauce on the can, if it is too high and if you are on a sodium restricted diet then it’s recommended to make the tomato puree or sauce at home. Homemade sauce will be fresh and shall not have preservatives and other additives high in sodium.
