Turkey Mushroom Marsala Recipe for Healthy Supper

Turkey Mushroom Marsala Ingredients:

2 turkey breast tenderloin steaks, small and skinned
½ cup shitake mushrooms
¼ cup (small) Marsala wine, dry
1 teaspoon water
¼ cup (small) water
½ teaspoon cornstarch
A dash of salt
A dash of ground black pepper
¾ teaspoon thyme
½ teaspoon rosemary
1 teaspoon olive oil
Linguine pasta

Method:

  1. Set a re-sealable plastic bag in a shallow dish. Place turkey pieces in the bag, leave aside.
  2. Combine the mushrooms, Marsala wine, salt, ground black pepper, ¼ small cup water, rosemary and thyme in a small bowl for marinade. Mix well and pour this mixture over the turkey pieces set in the plastic bag. Seal the bag and turn it several times to coat. Place the plastic bag with the shallow dish in the refrigerator and marinate for about 30 minutes to 2 hours. Turn the bag occasionally.
  3. Drain the turkey and reserve all the remaining marinade in a small bowl. With the help of paper towels, pat the turkey dry.
  4. Put a medium sized skillet on medium heat and pour in the olive oil. After a minute or two, add the turkey to the hot skillet and cook for about 9 to 10 minutes or until the turkey is tender and no longer pink in color. Turn the turkey occasionally to ensure even cooking from all the sides. Remove turkey from the skillet when done and place it in a bowl. Cover the bowl to keep the turkey warm.
  5. Pour the reserved marinade into the same skillet and bring it to boiling. After it boils reduce the heat and cover the skillet. Simmer for about 2 minutes or until the mixture is bubbly.
  6. Meanwhile, in a small bowl stir the cornstarch along with 1 teaspoon water and add to the simmering marinade in the skillet immediately. Cook and stir marinade over medium heat until the mixture is thickened. Cook for a minute more.
  7. To serve, place cooked linguine pasta in two different serving platters. Spread turkey and mushroom mixture over the pasta equally among both the platters. Serve with thick marinade in a bowl. This recipe makes 2 servings.
