Lamb Roast Recipe With Leg Of Lamb

Lamb Roast Recipe Ingredients:

3 pounds leg of lamb
2 small garlic cloves, peeled and minced
1 teaspoon rosemary
½ cup water
½ teaspoons freshly ground black pepper
½ teaspoon salt
Salad greens, optional
Lemon slice, optional

Method:

  1. Preheat the oven to 375 degree Fahrenheit.
  2. Trim any visible fat from the legs of the lamb and with a sharp knife make small slits all over.
  3. Stir together rosemary along with freshly ground black pepper and salt. Rub this herb mixture all over the meat including the slits using your hands. Also insert garlic slivers in the meat slits after rubbing the herb.
  4. In a shallow roasting pan, place lamb in such a way that the thickest side faces upwards. To the bottom of the pan add ½ cup water. In the center of the lamb (which is the thickest part) insert a meat thermometer (oven going). The bulb of the thermometer should not touch the bone as this might give incorrect readings.
  5. Place the roasting pan in the preheated oven and allow the meat to roast for 90 to 105 minutes for medium to rare doneness and 120 to 140 minutes for medium doneness. If the preference is medium or rare doneness, the thermometer should read 140 degree Fahrenheit. In the case of medium doneness the thermometer should read 155 degree Fahrenheit.
  6. As the meat is done, remove it from the oven and cover it with a foil. Let it stand on room temperature for 10 to 15 minutes. After standing the temperature of the meat should be about 145 degree Fahrenheit for medium to rare doneness and 160 degree Fahrenheit for medium doneness. Serve the roasted lamb legs hot on a bed of salad greens and lemon slices if desired. This recipe makes 7 servings.
