Low Fat Dessert Recipes Cooking Method

Method:

  1. Use a double broiler to melt the chocolate. Place the chocolate on the top vessel and broil until the chocolate is melted. Remove the top chocolate vessel from flame and let it cool at room temperature.
  2. In another bowl beat egg yolks and 3 tablespoons of sugar together in an electric beater until they turn frothy and pale yellow in color. Place this frothy egg yolk and sugar mixture on top of the double broiler. Add wine gradually, stirring constantly for 5 to 7 minutes on a low flame until the mixture becomes thick. Do not let the mixture boil. As the mixture gets thick remove the pan away from the heat and fold in the chocolate. Leave aside to cool at room temperature.
  3. Beat egg whites in another large bowl till stiff peaks form and fold this mixture gradually in the cooled chocolate mixture. Combine coco powder, ricotta and 2 tablespoons of sugar in another bowl and set aside.
  4. In an electric beater, beat cream until soft and fluffy. Add the remaining 1 teaspoon of sugar and beat the cream to get stiff peaks. Avoid overbeating.
  5. Dip ladyfingers in the remaining dessert wine and arrange at the base of a 9 inch square baking dish. Cover them with half of the ricotta, half of whipped cream and half of custard. Repeat the remaining ingredients in such a way that the whipped cream forms the top layer. Cover the dish with foil and refrigerate it for 3 to 4 hours or until completely set.
  6. Sniff coca powder evenly on top of the tiramisu and garnish with chocolate coffee beans before serving. This recipe makes about 6 to 8 servings.
  7. Chocolate dipped coffee beans: Set a double broiler over simmering water and melt 6 ounce chocolate and 1 cup dark roasted coffee beans until smooth, stir constantly. Remove from the heat and let it cool at room temperature. As the mixture thickens drop the beans in batches into the melted chocolate. Coat all sides completely, remove and line in a baking sheet lined with waxed paper. Let them dry completely. Store in an air tight container. Yields 1 medium cup.
