Cooking Healthy Pudding At Home

Rice Pudding Ingredients:

  • 2 1/2 cups (600 ml) of whole milk
  • 1/3 cup (66 grams) short or long grain white rice
  • 1 teaspoon salt
  • 1/4 cup (30 grams) golden or brown raisins, optional
  • Whipped cream (lightly sweetened)
  • 1/4 cup (50 gram) granulated fine white sugar
  • 1 teaspoon of pure vanilla extract
  • 1/4 teaspoon ground cinnamon

Method:

  • Take a medium sized heavy based saucepan. Combine together the rice, milk and salt. Place the saucepan on the fire at a high temperature and bring the contents to a boil. Then reduce the heat to medium low or medium. Let it simmer for a while till the rice starts getting tender. This should take approximately 25-30 minutes.
  • Remember to stir the milk and rice mixture frequently. You can either use a wooden spatula or a heatproof rubber spoon or spatula. This is done to prevent the milk and rice mixture from sticking to the sides and base of the saucepan.
  • Once the rice is tender, remove it from the heat. Next proceed to add the vanilla extract, fine sugar and ground cinnamon. Replace the saucepan on the fire and let it cook for another 5 to 10 minutes until the rice pudding begins to thicken. Stir occasionally. Once done, remove the pan from the heat and sprinkle the raisins on top.
  • Instead of raisins or along with it, you can also add pistachios or cashew nuts. Then spoon the rice pudding into the serving bowls and seal it with a plastic cling film or wrap.
  • If you prefer the skin or a film to form on the puddings, then allow the mixture to cool for a while, before covering it with the plastic wrap. Keep it refrigerated for about 1 to 2 hours. It is now ready to serve.
  • This can additionally be garnished with whipped cream that is slightly sweetened, if desired.
  • Alternatively, you can also add different flavorings like orange, rose water, lemon peel instead of vanilla.
  • Similarly, you can add other spices like nutmeg or mace along with cinnamon.
  • This dish can be served cold, hot or lukewarm.
