Pita Pizza Recipes And Italian Bread Pizza

Pizza Ingredients:

2, 6 inch pita loaves, whole wheat
3 tablespoon olive oil + extra oil for brushing the sides of the pita loaves
1 small red onion, sliced
2 garlic cloves, minced
1 1/3 cup mozzarella cheese, grated
1 small red bell pepper, thinly sliced
4 mushrooms, sliced
¾ cup zucchini, thinly sliced
1 teaspoon dried oregano, crumbled
3 tablespoon fresh basil leaves, shredded
2/3 cup fresh tomatoes, seeded and chopped
3 tablespoon parmesan cheese, freshly grated

Method:

  1. Preheat the oven to 350 degree Fahrenheit. Lightly coat a baking dish with a non stick cooking spray, leave aside.
  2. Cut each pizza loaves horizontally to get 4 rounds. Arrange these halved rounds in such a way that the rough sides are on the top of the baking dish. Lightly brush the top of the bread with the additional olive oil. Sprinkle salt on the round pitas and bake in the preheated oven for about 5 minutes. As they turn crisp and get a pale golden color remove them from the oven. Sprinkle half the amount of mozzarella cheese over this crisp pita breads and bake till the cheese melts, for approximately 1 minute.
  3. Heat oil in a medium skillet over medium heat. Add onions and garlic and sauté for about 5 minutes or till the onions are tender. Stir in bell peppers and cook for more 5 minutes or until the peppers are tender. Add mushrooms, zucchini, salt, pepper and oregano and cook for another 2 minutes. Stir constantly to mix all the ingredients well. Cook till mushrooms and zucchini are soft. Add the remaining mozzarella and stir for few seconds. Remove from heat immediately to prevent sticking the cheese at the bottom of the pan. Divide this vegetable and cheese mixture among the pita rounds. Top this mixture with the chopped tomatoes, basil, remaining mozzarella and parmesan cheese.
  4. Broil these rounds in a preheated broiler for about 3 minutes each (approximately 4 inches away from the heat). As the cheese melts and becomes bubbly remove the pita rounds and serve hot. You may serve tomato ketchup in a small dish along with the pizza. This recipe makes 2 servings, 2 pizzas per serving.

Health Tip:

  • Avoid using refined flour pita breads for vegetable pita pizzas.
  • You may alter the vegetables according to your choice. Add as much vegetables as you can.
  • Use reduced fat or low fat mozzarella and parmesan cheese, preferably.
