Hot Chocolate Ice Cream Recipe

Preparation time: 2 – 2 ½ hrs
Cooking time: 30 minutes

Ingredients:

  • Heavy whipping cream – 1 ½ cups
  • Whole milk – 1 ½ cup
  • Brown sugar – ¾ cup
  • Egg yolks – 5
  • Unsweetened cocoa powder – ¼ cup
  • Ground chili powder – 1-2 teaspoons.

Method:

  1. Place a large sauce pan, preferably the non stick variety over a medium flame.
  2. Gently pour in the brown sugar, milk and heavy cream.
  3. Stir this mixture continuously ensuring that the sugar does not stick to the bottom of the pan and instead dissolves completely in the milk and cream to form a smooth thick paste.
  4. Now pour in the cocoa and chili powder and immediately start whisking them into the sugar, cream and milk mixture so as to avoid the formation of lumps.
  5. After the cocoa and chili powder are added you will notice that the mixture will become rich brown in color.
  6. Once you achieve a homogenous mixture, take the pan off the heat and briskly mix in the egg yolks. These yolks need to be poured in slowly into the hot mixture while stirring continuously, thereby ensuring that they mix well into the mixture. If this is not done, the egg will start to cook and you will have bits of cooked egg in the mixture.
  7. Now place the saucepan with all the well mixed ingredients back onto a medium flame and allow it to cook till it begins to boil and has small bubbles which will form towards the edges. Ensure that the mixture is being continuously stirred all the time.
  8. Once the bubbles are formed, take the pan off the heat and allow it to cool till the mixture is at room temperature.
  9. Thereafter pour this cooled mixture into an ice cream maker and allow it to set .This usually takes 2-3 hrs.
  10. When the ice cream is ready, it may either be saved in an air tight container to be consumed later or served immediately.
