Recipes With Blue Cheese And Stuffed Endives

Stuffed Endive Ingredients:

36 Belgian endive or lettuce, around 3 heads
½ cup Roquefort cheese, coarsely crumbled
8 ounce cream cheese, fat free or reduced fat
2 slices bacon, drained and crumbled, crisp cooked
½ cup green onions or scallions, rinsed and chopped
2 tablespoon toasted hazelnuts, chopped finely

Method:

  1. Combine both the cheese that is cream cheese and Roquefort cheese along with bacon slices, green onions and nuts in a medium bowl. Mix well. Spread 2 teaspoon each of this mixed vegetable and cheese mixture in to each lettuce or Belgian endive leaf cup. Serve immediately.

  • Blue cheese stuffed endive is a very low calorie recipe which provides only 35 calories and 2 gm total fat per serving. This recipe can be considered diabetes friendly as well as heart friendly as it provides negligible amounts of cholesterol (6 mg), saturated fats (1 gm), carbohydrates (1 gm) and low amounts of sodium (71 mg) per serving.
