Blueberry Tart Recipes For Cheese Cakes

Cheese Tart Ingredients

Berries – 3 cups of mixed berries such as strawberries, blueberries, raspberries or blackberries
Cream cheese – 4 ounces of reduced-fat and softened cream cheese
Dessert topping – 4 ounces of light whipped topping. If it is of the frozen type, make sure that you put it out in advance to thaw
All-purpose flour – 1 1/4 cups
Orange marmalade – 2 tablespoons of the reduced- sugar kind
Shortening – 1/3 cups
Salt – 1/4 tablespoon
Water – 4 tablespoons of very cold water

Method

  1. Mix the flour and salt in a bowl and then add the shortening. Use your pastry blender until the pieces of dough are roughly pea sized. Add 3 tablespoons of water to the dough and mix it quickly and thoroughly. If the dough is crumbly add 1 or 2 more tablespoons of water and mix once more. Form the dough into a ball and place it on a lightly floured flat working surface.
  2. Flatten the ball of dough with your hands and use a rolling pin to flatten it out into a circle. Move the rolling pin from the center of the dough out towards the edges so that the pastry is uniformly thick. It should now be about 11 inches in diameter. Wrap the pastry around the rolling pin and transfer it to a tart pan. Use a 9-inch pan that has a removable bottom.
  3. Unroll the pastry and ease it into the pan carefully. Press the pasry into the fluted side of the pan. Use a fork or a knitting needle to prick the bottom and side of the pastry.  Trim the edges of the pastry to the tart pan. Line the pastry in the pan with a double thickness of foil.
  4. Preheat your oven to 450°F. Place your pastry pan in the oven and let the pastry bake for 8 minutes. Remove the foil from the pan and allow it to bake for an additional 6 to 8 minutes. Once it is done, the pastry will turn a light golden brown color. Place the pan on a wire rack and allow the pastry to cool for at least 30 minutes.
  5. While your pastry is cooling, add the cream cheese to a medium size bowl. Use an electric mixer on medium to high speed to beat it up thoroughly. Keep the mixer on medium or high speed for 30 seconds or so. The cream should now be fluffy. Beat in the orange marmalade and fold in the whipped topping.
  6. Spread your cream cheese mixture evenly in the bottom of the cooled pastry and arrange the berries on top of it.
